Ingredients
1.5 pounds ground chicken
2 cups grated zucchini- with peel and seeds depending on where you are in your diet
¼ cup of onions chopped
2 cloves are garlic chopped
Salt and pepper to taste
Directions
Saute onion and garlic until soft.
Mix all ingredients together
Scoop 1 heaping TSP mixture into SCD legal oil of choice.
Cook 4-5 minutes on each side- checking to be sure cooked in middle
I made a double batch and froze some for later. I took them out to thaw before toasting them in
toaster oven. You could also re-fry in pan if you wanted.
Great with homemade mayo.
