This is very good! My non-SCD family loves it. It makes a wonderful creamy sauce. Recipe is so basic yet so good you could go without spices or change them up, maybe onion powder and chives or something. Even better the next day!
Ingredients
2 lbs skinless, boneless chicken breast
1 TB chili powder (SCD legal homemade mix)
2 cups shredded Monterrey Jack cheese
1/2 cup yogurt ** see below
1/2 cup mayo (SCD legal homemade)
1 TB fresh cilantro (optional)
Directions
Chop chicken, sprinkle with chili powder, salt and pepper and saute in oil until cooked through. Mix in rest of ingredients and stir until cheese is melted and everything is blended together.
**My yogurt was very sour. I think this would be better if you used a 1/4 cup yogurt and a 1/4 cup DCCC. If your yogurt isn't extremely sour it should be fine.
