Ingredients:
3 eggs
pinch of salt
1 cup cashew butter
¼ cup coconut oil, softened but not melted (I don’t see why part of this couldn't be butter)
½ cup honey (splitting it with ¼ cup date paste nice too)
2 T. cinnamon
½ T. vanilla (or 1 ½ t.)
¾ c. applesauce pureed
1 cup almond flour (can also use ½ almond meal leftover from making almond milk)
1 t. baking soda
Instructions:
Preheat oven to 325
Use square baking pan, 8x8 is good. Line with parchment paper.
Beat eggs and salt together for 3-5 minutes till creamy and pale.
Beat in gradually: cashew butter, coconut oil, honey, cinnamon, vanilla
Beat in applesauce and baking soda and mix in gently.
Pour into prepared pan, bake 35-40 minutes (test, and smell too. The house will smell like done cake when you’re sitting at the computer on fb.)
Cool completely, lift out of pan with parchment, refrigerate then cut into squares.
This is really nice topped with sweetened yogurt. The texture from the cashew butter is like that of a traditional cake, I love it.
This is an adaptation from a legal SCD “brownie” recipe, I’m going to try this one with the bananas instead of applesauce, and peanut butter instead of cashew butter.
