I played around with this a bit until it was a winner with my 14 year old. Hope this makes someone's night! My son sure likes it!
Ingredients
1 TBSP coconut oil
1TBSP butter
1 TBSP coconut flour
1 TBSP honey
1 egg
1/2 tsp vanilla extract
1/8 tsp baking soda
cinnamon to taste
Directions:
Melt butter and coconut oil in the microwave for about 20-30 seconds (until melted). Then add the rest of the ingredients and whisk with a fork until well combined. Cook in microwave on high for 1:20 to 1:30. I like mine at 1:20, but my son prefers at 1:30. My microwave is 1300W so you may have to adjust time according to your microwave.
