This is a childhood comfort food of mine, adapted for SCD. It really hits that need for something warm and comforting and is SUPER YUMMY. (Sure to be a hit with the kids, too.)
Directions:
Line the bottom of a casserole dish with a bag of frozen cauliflower florets.
Add a layer of pre-browned ground beef (about a pound).
Pour a layer of cream-of-whatever (mushroom, celery, etc) soup over the whole dish. Will have to make this yourself -- I simmered pureed celery & a little onion with almond milk and half a stick of butter for 20-30 mins until it thickened up, and it turned out quite good. You want it to be sort of sprinkled all over the whole casserole, but don't totally drench it.
Add a layer of grated cheddar.
Bake at 375 for about 30 mins or however long it takes for the cheese to start to brown and crisp up.
Serve with ketchup (or your favorite burger condiment).
