Ingredients
3 egg whites
150gm honey
1/8 tsp salt
Vanilla
250gm grated dry natural coconut
Preheat the oven to 150oC
1. Beat the egg whites with the salt and vanilla until very stiff.
2. Keep beating the egg whites while pouring the honey in a very fine stream. The product should still be stiff.
3. Using a spoon, add the grated coconut and mix thoroughly.
4. Grease 2 trays with butter. Pick a small amount of the coconut mixture with a tablespoon and empty it on the buttered tray with the help of another spoon. They will not grow bigger, so you can stack them close to each other.
5. Bake the biscuits for about 35 minutes or until they are very light golden brown. Let them cool before serving.
