Cauliflower Crust Pizza

  • one head of cauliflower and put it in the food processor until it was rice consistency.

  • Then I put it in my ricer to squeeze some water out. I had to do that in portions.

  • Then I put it in the microwave for 3 minutes transferred to a tea towel and rung it out for what seemed like forever:) the ball of cauliflower you start with will be half its size when your done squeezing all that water out!!

  • Then put it in a bowel with 2 eggs and 1/4 cup shredded cheese, (I used parm and added some dehydrated oregano and garlic)

  • Put it on a pan with parchment and spread it out with your hands.

  • Cook at 450 for 10min then put on your toppings (I used provolone fresh basil, tomato, prosciutto and some shredded manchego on top)

  • Then put it back in the oven for another 10min.

It was really good! Best pizza I have had so far on SCD.
