Cauliflower Crust Pizza
one head of cauliflower and put it in the food processor until it was rice consistency.
Then I put it in my ricer to squeeze some water out. I had to do that in portions.
Then I put it in the microwave for 3 minutes transferred to a tea towel and rung it out for what seemed like forever:) the ball of cauliflower you start with will be half its size when your done squeezing all that water out!!
Then put it in a bowel with 2 eggs and 1/4 cup shredded cheese, (I used parm and added some dehydrated oregano and garlic)
Put it on a pan with parchment and spread it out with your hands.
Cook at 450 for 10min then put on your toppings (I used provolone fresh basil, tomato, prosciutto and some shredded manchego on top)
Then put it back in the oven for another 10min.
It was really good! Best pizza I have had so far on SCD.
