These muffins are soft and sweet and oh-so-good...
Ingredients:
2 large ripe bananas (or 1 cup apple sauce)
4 eggs
2 cups almond flour (nuts in coffee grinder works)
1/2 stick of butter
2 teaspoons honey
1 teaspoon baking soda
2 teaspoons pure vanilla (check ingredients for added sugar)
1/4 teaspoon cinnamon
1 dash or two of nutmeg
Directions:
Mix all ingredients together, and blend until smooth.
Line muffin tin with paper muffin liners, and fill each cup 3/4 full. Will also work in a 9x9 baking pan if you add 10 minutes on to the bake time.
Bake at 350 for 25 minutes.
Serve warm with a little butter - DELISH!!
Makes about a dozen muffins.
