Spongy SCD Cake (still perfecting this, will update when improved)
9 eggs, separated
2 cups almond flour
1 tbsp vanilla extract
1/2 cup honey
1/2 cup applesauce
a pinch of salt
Beat the egg whites until stiff.
Combine the rest of the ingredients in a separate bowl. fold everything together carefully but thoroughly.
Bake in a 9x13 inch pan for 1 hour at 350 degrees.
I find this comes out better with cinnamon and nutmeg added to the above
ingredients. Add those to the yolk mixture if desired.
