2 eggs
Some broccoli, cut into bite sized pieces (other ideas: tomatoes, eggplant, zucchini, yellow squash, green beans, peppers, peas)
Some fresh spinach
A bunch of grated cheddar and pepper jack cheese
Salt & pepper to taste
Mix the eggs and pour into a greased quiche pan or 8x8 pan. Add the veggies and cheese. Bake at 350 or 375 for 30-40 mins. The cheese turns into a nice hardened crunchy top that acts like an upside down crust- a very nice texture combo! Made it for dinner Monday night and made a smaller version for breakfast this morning and cooked it in my toaster oven at 375 for 30 minutes.
