Ingredients
¼ cup butter, melted
1/3 cup coconut flour
4 eggs
¼ teaspoon salt
¼ teaspoon onion powder (SCD Legal)
Approximately 3/4 cup cheddar cheese, shredded
Directions:
Blend together eggs, butter, salt, and onion powder. Whisk coconut flour into batter until there are no lumps. You may have to add more flour. Fold in cheese. Let batter rest for 3-4 minutes to enable flour to absorb wet ingredients. Drop batter by the spoonful onto a greased cookie sheet (I used parchment). I used a spoon to spread batter out to make them flat. Bake at 400 degrees for 15 minutes. If you flatten them watch closely so they don't burn.
These are very good. The cheese and onion powder disguise the coconut flour taste. Making them flat also enables you to easily toast in the toaster.
