Ingredients
12 oz Butternut Squash
1/4 cup of chopped Onion
1 TBS Oil
1 Cup chicken broth
1/4 cup of coconut milk or yogurt (recipe called for cream)
Directions
Cook butternut squash until mushy set aside
saute onion in the oil
add chicken broth
add coconut milk or yogurt
stir in squash
heat through without boiling
puree together
I did this all in one pot and then pureed in my food processor. A wand mixer or blender will work too.
