Ingredients
* 4 zucchini halved
* Approx. 1 cup farmers cheese
* Approx. 1 cup marinara sauce (I used Rao’s tomato basil sauce, but I also use my mother’s sauce recipe)
* Approx. 1lb ground beef made into sausage (1/2 tsp pepper, 1/2 tsp garlic powder, 1 ½ tsp Italian seasoning, pinch of red pepper. Since I am cooking for a toddler I make things a little bit more mild)
* ½ tsp parsley
* Approx. 1 cup of cheddar cheese
* Salt
* Pepper
Instructions
1. Preheat oven to 400
2. Cook the ground beef/sausage
3. Scoop out the seeds in the zucchini to make a boat.
4. Salt & Pepper the zucchini halves
5. Mix farmers cheese & parsley. Add water to make it a little pasty and easy to spread
6. Put approx. 2 TBS of the farmers cheese mixture in each half
7. Put approx. 2 TBS of marinara in each half
8. Put approx. 2 TBS of ground beef in each half
9. Put the cheddar cheese on each half
10. Bake for about 30 minutes
I made this up with the idea of zucchini lasagna and adapting my mother’s (Mary Helen in the SCD group) lasagna recipe. Everything is guestimations, I had ground beef left over. Perfect for breakfast eggs!
