From the Kitchen of my sister Susie
1/4 c. butter
1/2 c. onion, chopped
2 cloves garlic, minced
1/4 c. flour
2 c. 1/2 & 1/2
3 c. chicken broth {or 3 c. water and 3 T. chicken bouillon}
1/4 c. cornstarch - mixed with 1/4 c. water
1/4 t. nutmeg
2 bay leaves
1 large carrot, shredded
4 c. broccoli florets
2 1/2 c. cheddar cheese, grated
salt and pepper
Cook butter, onion and garlic until tender. Add flour and cook 1 minute. Stir in 1/2 & 1/2, chicken broth and cornstarch mixture. Add nutmeg, salt and pepper, bay leaves, carrots and broccoli and let simmer until veggies are tender. Stir in cheddar cheese right before serving.
