Pork or Chicken Enchiladas

One of my favorite meals!

2-3 c. leftover chicken or pork roast, shredded

1 T. olive oil

1 small red onion, diced

1 jalapeno, diced

4 cloves garlic

1 t. salt

7 oz. can green chilies

1 can green chili sauce

3-4 c. pepper-jack cheese, grated

10 flour tortillas

1 c. whipping cream

Brown onion, jalapeno and garlic in oil until tender. Add chicken and green chilies and heat through. Pour whipping cream into a pie dish or lipped plate. Dip tortilla in cream, coating both sides. Have another plate handy to place tortilla on. Add meat mixture, a tablespoon green chili sauce and sprinkle on a few tablespoons of cheese. Roll up and place in a greased pan. Repeat with other tortillas. Add remaining green sauce over top of tortillas and top with cheese. Cover and bake at 350 for 20 minutes.
