Mile-High Biscuits

These biscuits are to die for! I can't remember where I found this recipe, but I will never go back to my old one. They are perfection!

3 c. flour

1 1/2 t. salt

1 T. sugar

1 T. baking powder

1/4 c. shortening

3/4 c. buttermilk

1 egg, beaten

2-4 T. cold water

1 stick cold butter, cubed

2-4 T cold butter

Combine all dry ingredients, then cut in shortening. Pour in buttermilk, egg and water - stir together. Knead in by hand the cubed 1 stick of cold butter. There will be chunks. Press into a 1/2" layer with hands. No rolling pins! Cut out biscuits using a cup or biscuit cutter. Place on ungreased baking sheet. Sprinkle with kosher salt and add a pat of butter to the top of each biscuit. Bake at 425 for 12-15 minutes.

Top with butter and honey, or jam.

If making sausage and biscuits, I use a country style gravy mix. I follow the instructions on the package, but use milk instead of water and I add in crumbled pieces of cooked sausage.
