Homemade Noodles Recipe

6 eggs

1 1/2 t. salt

3 1/4 - 4 1/2 c. flour

Whisk eggs and salt. Add flour 1 cup at a time, until the dough is VERY thick. Knead on a floured surface, adding more flour until there are no sticky spots. Roll out very thin. Let dry at least 1 hour or up to 8 hours. Cut into strips. Add to boiling soup and cook 15-20 minutes.

This makes quite a lot (feeds our family of 6 with leftovers). You can cut the recipe in 1/2 or into 1/3 if desired.
