Homemade Breadsticks or Rolls

1 T. yeast

1 1/2 c. warm water

4 c. bread flour

2 T. sugar

1 1/2 t. salt

Toppings options:

butter

parmesan cheese

garlic salt

parsley

Combine yeast and water and let sit about 5 minutes to proof. Combine yeast mixture, flour, sugar and salt. Knead 5 minutes. Let raise for 30 minutes. Now you have a few options.

Variation 1:

Roll out bread sticks like snakes. Bake at 375 for 18 minutes, then brush with butter and sprinkle with garlic salt.

Variation 2: roll out bread sticks like snakes and then dip in 1/4c. melted butter, then in Parmesan cheese that has had some garlic salt and parsley mixed in with it. Bake at 375 for 18 minutes.

Variation 3: Make into 24 rolls. Bake at 375 for 17 minutes and rub tops with butter. These rolls are not soft and fluffy. They are chewy and dense. I like them on occasion to switch things up.

Variation 4: To make ahead - Make the dough and knead for 5 minutes. Refrigerate 2-5 hours until ready to use. Then prepare as directed in variations 1-3.
