Prepare Squash:
- Preheat oven to 400F
- Cut squash in half and remove seeds
- Sprinkle inside with herbs/spices
- Place in glass baking dish with 1/2 inch of water
- Bake for 35 - 45 minutes
- Poke with a knife to test (should be easy to pierce skin)
- Remove and let cool
- Use a fork to pull strands into a serving bowl
- Add sauce and enjoy
Simple Sauce Ingredients:
- 1 Tbsp Olive Oil
- 1 Yellow onion (diced)
- Garlic (2 or 3 cloves chopped)
- Spicy sausage or other meat (we often use shrimp)
- Herbs (Bay leaf, rosemary, thyme… - experiment - )
- Big can diced tomatoes (28 oz.)
Sauce Instructions:
- Heat oil
- Add onion and sauté for a few minutes (5 - 10)
- Add garlic and continue stirring… add the herbs
- Onions should be browning and you can smell the garlic
- Add the sausage and sauté until browned
- Drain some of the grease
- Add tomatoes and let simmer for awhile (30 min is ok an hour is better)
