Salad:
Rice noodles
2 grilled chicken breasts
1 head of lettuce (shredded)
3 green onions (diced)
1 cup celery (thinly sliced)
1 small cucumber (seeded and thinly sliced)
3 tablespoons toasted sesame seeds
3 tablespoons toasted almonds (slivered)
Dressing:
6 tablespoons sugar
7 tablespoons rice vinegar
2 teaspoons salt
¼ teaspoon white pepper
1 teaspoon lemon juice
¼ teaspoon 5-spice powder (optional)
¼ cup oil
Mix sugar, rice vinegar, salt, white pepper, lemon juice, spices, and oil; shake well in bottle.
Shred chicken breast, mix with 1-2 tablespoons dressing and set aside.
Mix noodles, vegetables, chicken, sesame seeds, and almonds. Pour dressing over salad and mix again.
