Montreal bbq rub
~3-4 hours from prep to serve
Prep and light fire (~15 min)
Prepare tri tip, trim excess fat, apply rub (~15 min)
Add smoking chunks (apple, pecan, hickory) and setup egg for indirect grilling at 250 (daisy wheel at half petal)
When egg is set at 250 degrees, put meat on and grill to 125-130 degrees (~45 minutes)
When meat reaches 130 degrees, pull from grill, wrap in foil, place in cooler and insulate (~1-2 hours, as desired)
Keep coal alive, but close down egg until ready to grill (daisy wheel at quarter petal or less)
When ready to grill, remove plate setter and setup egg for direct grilling, revive the coal, open egg up (target ~500 degrees, daisy wheel open)
Return meat to grill, flip and rotate every few minutes until meat reaches 145-150 degrees (~15 min)
When meat is done, tent with foil and rest (~10 min)
Slice thin against the grain and serve
