Ingredients:
- Bag of dry split peas (16 oz.) - Pour peas into a bowl and look for little stones
- 1 Tbsp Olive Oil
- 1 Yellow onion (diced)
- Garlic (2 or 3 cloves chopped
- Herbs (Bay leaf, thyme, red pepper, cumin, salt… - experiment - )
- 1 Cup of diced carrots
- 1 Cup of diced celery
- Optional Adds:
- Spicy sausage or other meat
- Diced tomatoes (14 oz.) (I like fire roasted)
- Diced zucchini
- Diced bell pepper
- What else is in the fridge…?
Instructions:
- Heat oil
- Add onion and sauté for a few minutes (5 - 10)
- Add garlic and continue stirring… add the herbs/spices.
- Onions should be browning and you can smell the garlic.
- Add the sausage and sauté until browned.
- Add carrots and celery and continue sautéing for a few more minutes.
- Add split peas and 6 to 8 cups of water.
- Bring to a boil for 5 to 10 minutes (stir frequently).
- Lower heat and bring soup to a gentle boil for 45 minutes to an hour.
The peas will swell, soften and start to breakdown.
If desired, add tomatoes, diced zucchini and other soft veggies and let simmer for 15 min or so…
