Night before:
Trim and rub brisket
6:00 soak smoking wood chips
6:00 fire prep
6:30 start fire
7:25 add chips, set plate and grill
(daisy at half petal)
7:30 brisket on, fat side down
11:30 flip fat side up
13:30 temp 165, move to foil fat side down, add coffee, wrap, return to grill
15:30 temp 200, remove from grill, pour off liquid, rewrap in foil, put in cooler to rest until serving
