With mixer, beat bananas until light and fluffy. Set aside.
Cream butter until light, then add sugar and cream them together.
Add eggs and beat well.
Sift flour, baking soda and lemon rind together.
Add to egg mixture, mix well, and fold in chopped nuts.
Carefully fold in bananas.
Pour into a greased loaf pan.
Bake at 350 degrees for 50-60 minutes until top is lightly browned.
Cool slightly in pan, then turn out on to rack to cool completely.
