Corned Beef Hash and Eggs

Ingredients

• 1/2C canola oil
• 2C sliced/cubed left over potatoes or hash browns
• 1C chopped yellow onion
• 2C+ chopped cooked corned beef
• 1/2 tsp salt
• 6-8 eggs

Directions

• In large skillet, heat oil, then cook onions and potatoes until browned
• Stir in corned beef and salt
• Lower heat, then create wells in the hash browns for the eggs, breaking one egg into each
• Cover and cook until poached
• Cut into sections around eggs, flip, cook a bit
• Flip and serve
