2-3 eggs per person
¼ onion
4-6 green chiles
2-3 tomatoes
1 tablespoon vegetable oil
1 dash turmeric
1 dash salt
1 dash red chili powder
1 teaspoon minced garlic, or 1 dash of garlic powder
1 dash ginger
Whisk eggs in a bowl and set aside.
Chop onion, chiles, and tomatoes. Sauté onions and chiles in oil, add spices to taste. Add tomatoes and cook into a spicy paste. Pour in eggs. Stir the mix not allowing eggs to stick to the pan. Cook to desired texture and serve.
