Hearty Baked Beans
1 pound dried navy beans*** (4-5 cans of pinto beans and skip down to adding everything together)
2 quarts water ***
1 small ham hock ***
1 bay leaf ***
¾ pound ground beef, cooked *** (2 C smoked shredded pulled pork)
2 cups ketchup
1 cup firmly packed brown sugar
3 T. Worcestershire sauce
2 T. molasses
1 T. dry mustard
½ tsp. ground ginger
1 large onion, chopped
1 small green pepper, seeded and chopped
1 (8 oz) can tomato sauce
Sort and wash beans. Place in a Dutch oven. Cover with water 2 inches above beans; let soak overnight. Drain; return beans to Dutch oven. Add 2 quarts water, ham hock, and bay leaf. Bring to a boil; cover, reduce heat, and simmer 2 hours. Drain; reserve 1 cup liquid. Remove bay leave. Remove ham from bone; chop. Add ham, beef, and remaining 9 ingredients to beans. Transfer to a greased 5-quart casserole; add reserved 1 cup liquid. Cover and bake at 350 degree for 2 hours; stir occasionally. Yield: 10 servings

We made the night before, baked for 1.5 hours then baked an additional hour to warm the next day.
