Cake Mix Recipe
2 eggs
1/2 C butter
1 choc. cake mix - Duncan Hines devil's food cake
Beat eggs & butter then add cake mix. Roll dough into walnut size balls. Bake at 350 degrees for 8-10 min. Frost cookies when cooked!(I like to make small ones also with no more than a Tb. of batter per cookie)
ALTERNATE GIANT COOKIE:
Trace two 6" circles on parchment paper and spread batter to fill circle. Bake each cookie for 12-15 minutes. You’ll be looking for cracking on the edges and moving into the center of the cookie. This is a good signal the cookie is ready. Remove pan from oven and let cool on the counter until cool enough to touch. Slide parchment onto a cooling rack. Wait until cookie is completely cool before filling.
Alternative from scratch recipe:
½ cup shortening
1 cup sugar
1 egg
1 tsp. vanilla
1 ½ cups flour
1/3 cup unsweetened cocoa
½ tsp. baking soda
½ tsp. salt
¼ cup milk
Cream shortening, sugar, egg and vanilla in large mixer bowl until light and fluffy. Combine flour, cocoa, baking soda and salt; add alternately with milk to creamed mixture until ingredients are combined.
Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 375, for 11-12 minutes or just until soft-set (do not overbake). Cool 1 minute. Remove from cookie sheet; cool completely on wire rack. Prepare Crème Filling. Spread bottom of one cookie with about 1 tablespoon filling; cover with another cookie. Repeat with remaining cookies.
About 15 filled cookies.
Cream cheese frosting
4 oz cream cheese
1/4 C or less of butter at room temp.
1/2 tsp. vanilla
1 1/2 tsp. milk
2-2 1/2 C powdered sugar
(this frosting recipe has been halved)
