½ cup butter, softened
½ cup shredded Cheddar cheese
1/3 cup freshly grated Parmesan cheese
1 clove garlic, pressed
¼ tsp dried Italian seasoning
1 (16 oz) loaf sliced French bread
1 ½ cups chopped cooked chicken breast
1 cup shredded mozzarella cheese
¼ cup chopped red bell pepper (optional)
¼ cup chopped green onions
Combine first 5 ingredients in a small bowl, and spread evenly over bread slices. Top with chicken; sprinkle with mozzarella cheese, bell pepper, and green onions. Bake at 350 for 10 minutes or until cheese melts. Yield: 6 servings.
