1/2 cup oatmeal1/4 cup finely chopped onion 1/2 T parsley 1/4 cup sour cream 1 t salt 1 lb ground beef ¼ t pepper 1 T oil4 medium potatoes peeled and cut up 1 can mushroom soup, undiluted 1 can cream of celery soup ½ cup sour cream Boil potatoes to partially cook. Combine oatmeal, sour cream, and mix well. Let stand 10 minutes. Add meat, parsley, onion, salt, pepper. Mix and shape into
1” meat balls. Heat oil in skillet, add meat balls and brown. Remove dutch oven from heat. Drain potatoes and place on top of meat balls. Combine soups, sour cream.. Pour over potatoes and meat balls. Cover. Bake 30 minutes at 350. (Using my cast iron pan I bake it 10 min with the lid off, but in the oven, and then covered the rest of the time.)
