Soft Pretzel Bites
What you need:
- 1 1/2 cups warm water
- 2 Tbsp. brown sugar
- 2 1/4 tsp. active dry yeast
- 6 Tbsp. unsalted butter, melted
- 2 1/2 tsp. kosher salt
- 4 1/2 to 5 cups all-purpose flour
- Vegetable oil
- 3 quarts water
- 2/3 cup baking soda
- 1 whole egg, beaten with 1 Tbsp. cold water
- 2 Tbsp. sugar
- 1 tsp. cinnamon
- Coarse kosher salt
Directions:
- In a stand mixer, combine water, sugar, yeast, and butter with a dough hook and let sit for 5 minutes.
- Add salt and flour. Mix on low speed until combined. Then increase to medium and continue kneading with dough hook for 3 to 4 minutes. If needed, add 1 Tbsp. more flour at a time until it no longer appears wet. You'll want the dough to be smooth and pull away from the sides of the bowl.
- Remove to a lightly floured surface and knead into a ball.
- Coat a bowl with vegetable oil and add dough. Turn to coat with oil. Cover with a clean towel and place in a warm spot until doubled in size for about 1 hour.
- Bring water to a boil in a saucepan and add baking soda.
- Divide dough into 8 pieces and roll out into a 22-inch long rope. Cut each rope into 1-inch pieces.
- Boil pretzels in batches for about 30 seconds at a time. Remove with a slotted spoon and place onto a greased or parchment paper-lined baking sheet.
- Bake bites in a preheated 425 degree oven for 8 minutes.
- Mix together sugar and cinnamon.
- Remove from oven, brush with egg wash, and sprinkle with cinnamon sugar or with salt - I did half sweet, half salty.
- Bake for another 8 to 10 minutes or until golden and cooked through.
