Crispy Parmesan Chicken with Creamy Lemon Pasta

What you need:

For the Crispy Parmesan Chicken:

    • 2 chicken breasts, sliced in half to make 4 thin chicken breasts
    • 6 Tbsp. unsalted butter, divided
    • 1/2 cup Italian bread crumbs
    • 1/2 cup shredded Parmesan cheese
    • 1/4 cup all-purpose flour

For the Creamy Lemon Garlic Pasta:

    • 8 oz. thin spaghetti (or pasta of your choice)
    • 1/2 cup heavy cream
    • 1/2 cup shredded Parmesan
    • Juice of one lemon
    • 1 tsp. garlic powder
    • 1/2 tsp. salt
    • 1/4 tsp. pepper
    • Chopped fresh parsley, for garnish

Directions:

    1. For the chicken: Melt 4 Tbsp. butter in a shallow dish. In another shallow dish, combine bread crumbs, Parmesan cheese, and flour.
    2. In a large skillet, melt remaining 2 Tbsp. butter over medium heat.
    3. Dip the chicken in the shallow dish of butter and then in the bread crumbs.
    4. Place in skillet and cook for 3 to 4 minutes on each side or until crispy and browned and cooked through.
    5. For the pasta: While the chicken cooks, prepare pasta according to package directiosn, then drain.
    6. In a medium skillet, whisk together heavy cream, Parmesan cheese, lemon juice, garlic powder, salt, and pepper over medium-high heat. Once thickened, remove from heat and add to pasta. Toss to coat.
    7. Serve pasta topped with sliced chicken and chopped parsley.
