Banana Pudding Cheesecake
What you need:
- 1 extra large graham cracker crust (the one with 2 extra servings)
- 2 pkg (8 oz each) cream cheese, softened to room temperature
- 1 box (3.4 oz) banana cream instant pudding
- 2 large eggs
- 1/2 cup granulated sugar
- 15 vanilla wafers, chopped
- Sliced banana
- Whipped cream
- Whole vanilla wafers
Directions:
- In a stand mixer, combine cream cheese and sugar until smooth.
- Add eggs and mix until combined. Don't overmix.
- Add pudding mix and mix until just combined. Scrape sides as needed.
- Fold chopped vanilla wafers into the batter.
- Pour batter into crust and smooth to even out.
- Bake in a preheated 300 degree oven for 55 to 60 minutes.
- Allow to cool to room temperature, then cool for several hours in the refrigerator.
- Optional: top with sliced bananas, whipped cream, and whole vanilla wafers.
