One Pot Ground Beef Tortellini Casserole

What you need:

    • 20 oz. cheese tortellini
    • 1 lb. ground beef
    • 1 small onion, diced
    • 2 cloves minced garlic
    • 1/2 tsp. Italian seasoning
    • 1 tsp. salt
    • 1/2 tsp. black pepper
    • 1 can (15 oz.) diced tomatoes, drained
    • 2 1/2 cups beef broth
    • 1/4 cup heavy cream
    • 1 1/2 cups Italian cheese blend, divided
    • 2 Tbsp. chopped fresh parsley

Directions:

    1. In a large skillet over medium-high heat, cook ground beef until almost cooked through, crumbling as you go. Drain if needed.
    2. Add onions and garlic and cook until onion begins to soften. Stir in salt, pepper, and Italian seasoning.
    3. Add tortellini, tomatoes, and broth and bring to a boil.
    4. Cover and reduce heat. Simmer for 5 minutes.
    5. Remove cover and simmer for a few more minutes until liquid is almost absorbed.
    6. Remove from heat and stir in heavy cream and 1/2 cup cheese.
    7. Top with remaining cheese and place under a broiler for a few minutes until cheese starts to brown.
    8. Serve topped with parsley.
