Sourdough Coffee Cake

What you need:

For the cake:

    • 1 cup sourdough starter
    • 1/3 cup vegetable oil
    • 1 egg
    • 1 cup all-purpose flour
    • 3/4 cup granulated sugar
    • 1/2 tsp. salt
    • 1 tsp. baking soda
    • 1 tsp. cinnamon

For the topping:

    • 1 tsp. cinnamon
    • 1/2 cup brown sugar
    • 2 Tbsp. unsalted butter
    • 1 Tbsp. all-purpose flour

Directions:

    1. For the cake: In a small bowl, combine sourdough, vegetable oil, and egg.
    2. In a medium bowl, combine flour, sugar, salt, baking soda, and cinnamon.
    3. Add wet ingredients to dry and stir until just combined.
    4. Pour into a greased 9-inch square pan.
    5. For the topping: combine ingredients with a pastry cutter or fork until pea-sized crumbs form.
    6. Sprinkle topping over the top of the batter.
    7. Bake in a preheated 350 degree oven for 35 minutes or until a toothpick inserted into the center comes out clean.
