Bacon Cinnamon Rolls

What you need:

For the Dough:

    • 1 cup warm milk
    • 1 pkg. dry active yeast
    • 2 eggs, room temperature
    • 1/2 cup granulated sugar
    • 1/3 cup unsalted butter, melted
    • 1 tsp. salt
    • 4 1/2 cups bread flour

For the Filling:

    • 1/3 cup unsalted butter, softened
    • 1 cup brown sugar
    • 2 1/2 tsp. ground cinnamon
    • 1 tsp. ground cinnamon
    • 12 slices precooked bacon

For the Icing:

    • 4 oz. cream cheese, room temperature
    • 1/4 cup unsalted butter, room temperature
    • 2 1/2 cups powdered sugar
    • 1/2 tsp. vanilla extract
    • 1/8 tsp. salt
    • 2 Tbsp. vanilla ice cream or milk

Directions:

    1. For the dough: Preheat oven to 200 degrees, then TURN IT OFF. Heat milk in microwave for 1-2 minutes or until it reaches 110 degrees. Add yeast to warm milk and let it activate and get frothy.
    2. Add milk to a stand mixer with eggs, granulated sugar, butter, salt, and flour. Mix with a dough hook until it comes together.
    3. Place dough into a lightly greased bowl and cover with a damp towel. Place into warm oven and let rise for 1 hour.
    4. For the filling: Mix together brown sugar, cinnamon, and nutmeg.
    5. Once dough has doubled in size, transfer to a lightly floured surface. Knead a few times and then roll out into a 16x21-inch rectangle.
    6. Spread with the softened 1/3 cup butter and then top with brown sugar mixture.
    7. Lay out 12 pieces of bacon and then roll up the dough from the long side.
    8. Slice into 12 even pieces and place into a lightly greased 9x13-inch baking dish.
    9. Bake in a preheated 400 degree oven for 20 minutes or until lightly browned.
    10. For the icing: In a stand mixer, add all ingredients and mix until combined.
    11. Let cinnamon rolls cool slightly and top with icing.
