Bacon Cinnamon Rolls
What you need:
For the Dough:
- 1 cup warm milk
- 1 pkg. dry active yeast
- 2 eggs, room temperature
- 1/2 cup granulated sugar
- 1/3 cup unsalted butter, melted
- 1 tsp. salt
- 4 1/2 cups bread flour
For the Filling:
- 1/3 cup unsalted butter, softened
- 1 cup brown sugar
- 2 1/2 tsp. ground cinnamon
- 1 tsp. ground cinnamon
- 12 slices precooked bacon
For the Icing:
- 4 oz. cream cheese, room temperature
- 1/4 cup unsalted butter, room temperature
- 2 1/2 cups powdered sugar
- 1/2 tsp. vanilla extract
- 1/8 tsp. salt
- 2 Tbsp. vanilla ice cream or milk
Directions:
- For the dough: Preheat oven to 200 degrees, then TURN IT OFF. Heat milk in microwave for 1-2 minutes or until it reaches 110 degrees. Add yeast to warm milk and let it activate and get frothy.
- Add milk to a stand mixer with eggs, granulated sugar, butter, salt, and flour. Mix with a dough hook until it comes together.
- Place dough into a lightly greased bowl and cover with a damp towel. Place into warm oven and let rise for 1 hour.
- For the filling: Mix together brown sugar, cinnamon, and nutmeg.
- Once dough has doubled in size, transfer to a lightly floured surface. Knead a few times and then roll out into a 16x21-inch rectangle.
- Spread with the softened 1/3 cup butter and then top with brown sugar mixture.
- Lay out 12 pieces of bacon and then roll up the dough from the long side.
- Slice into 12 even pieces and place into a lightly greased 9x13-inch baking dish.
- Bake in a preheated 400 degree oven for 20 minutes or until lightly browned.
- For the icing: In a stand mixer, add all ingredients and mix until combined.
- Let cinnamon rolls cool slightly and top with icing.
