Garlic Chicken and Broccoli Cashew Stir Fry

What you need:

    • 1/4 cup soy sauce
    • 3 cloves minced garlic
    • 3 Tbsp. brown sugar
    • 1 tsp. vegetable oil
    • 1 lb. chicken, cut into bite size pieces
    • 3/4 cup chicken broth, divided
    • 1 tsp. cornstarch
    • 3 cups fresh broccoli florets
    • 1 cup cashews
    • Green onions, diced
    • Cooked rice, for serving

Directions:

    1. Whisk together soy sauce, garlic, brown sugar, and vegetable oil in a small bowl.
    2. Add chicken in a skillet over medium-high heat. Pour sauce over the top and cook until chicken is no longer pink.
    3. In a small bowl, whisk together 1/4 cup chicken broth and cornstarch. Set aside.
    4. Add 1/2 cup chicken broth with broccoli and cashews into the skillet with the chicken.
    5. Cover and cook for 3 to 5 minutes or until broccoli is tender.
    6. Add cornstarch mixture and let simmer, uncovered, until sauce thickens.
    7. Serve over rice topped with green onions.
