What you need:
- 1 lb. chicken breast
- 1/4 cup orange juice
- 3 Tbsp. lime juice
- 2 cloves minced garlic
- 1 Tbsp. cilantro, chopped
- 1/2 tsp. black pepper
- Salt
- Spring mix salad
- Sliced strawberries
- Mandarin orange slices
Directions:
- In a gallon size zipper bag, mix together orange juice, lime juice, garlic, cilantro, and pepper.
- Add chicken and marinate for 1 hour or up to 24 hours.
- Remove chicken from marinade and season with salt.
- Cook chicken in desired method and allow to rest 5 minutes before slicing.
- Serve salad by topping spring mix with strawberries, oranges, and sliced chicken.
