Blueberry Cheesecake Oatmeal
What you need:
- 1/2 cup rolled oats
- 1/4 tsp. cinnamon
- Honey for sweetness to taste
- 1/2 tsp. vanilla extract, divided
- 1 cup water
- 1/2 cup blueberries
- 1 1/2 Tbsp. cream cheese
Directions:
- In a small saucepan, combine oatmeal, cinnamon, and honey.
- Add water and 1/4 tsp. vanilla extract and bring to a boil over medium high heat.
- Once boiling, reduce heat to medium low and simmer until thickened, about 5 minutes, stirring constantly.
- Remove from heat and let cool for 5 minutes.
- Meanwhile, combine cream cheese, honey, and 1/4 tsp. vanilla extract in a small bowl. Blend until light and fluffy with a hand mixer.
- Transfer the oatmeal to a bowl and stir in blueberries and cream cheese mixture. Top with a few extra blueberries and serve!
