Blueberry Cheesecake Oatmeal

What you need:

    • 1/2 cup rolled oats
    • 1/4 tsp. cinnamon
    • Honey for sweetness to taste
    • 1/2 tsp. vanilla extract, divided
    • 1 cup water
    • 1/2 cup blueberries
    • 1 1/2 Tbsp. cream cheese

Directions:

    1. In a small saucepan, combine oatmeal, cinnamon, and honey.
    2. Add water and 1/4 tsp. vanilla extract and bring to a boil over medium high heat.
    3. Once boiling, reduce heat to medium low and simmer until thickened, about 5 minutes, stirring constantly.
    4. Remove from heat and let cool for 5 minutes.
    5. Meanwhile, combine cream cheese, honey, and 1/4 tsp. vanilla extract in a small bowl. Blend until light and fluffy with a hand mixer.
    6. Transfer the oatmeal to a bowl and stir in blueberries and cream cheese mixture. Top with a few extra blueberries and serve!
