Make Ahead Breakfast Scrambles
What you need:
For the Denver omelet scrambles:
- Diced ham
- Diced green bell pepper
- Shredded sharp cheddar cheese
- Minced onion
- Salt and pepper
- Italian seasoning
- Eggs (2 per jar)
For the jalapeno popper scrambles:
- Bacon bits
- Diced jalapeno peppers
- Shredded cheddar or Monterey jack cheese
- Minced onion
- Salt and pepper
- Eggs (2 per jar)
Directions:
- Divide ingredients except eggs for each variety of scramble into mason jars. Seal and store in the refrigerator for up to a week.
- When ready to use, crack 2 eggs into a jar and stir to combine.
- Cover with a paper towel and microwave for 1 minute. Stir and continue microwaving, covered, for 30 seconds at a time until eggs are set. Our 1000 watt microwave takes a total of 2 minutes.
