Chocolate Chip Cookie Muffins
What you need:
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 3/4 cup whole milk
- 1 tsp. vanilla extract
- 5 Tbsp. mini chocolate chips (or more)
Directions:
- In a mixing bowl, whisk together flour, baking powder, and baking soda.
- In a separate bowl, beat together butter and sugars until creamy.
- Add eggs and mix until just combined. Then add vanilla and milk and mix until combined.
- Slowly, add dry ingredients to wet ingredients and mix until just combined. Fold in chocolate chips.
- Pour batter into a 12 cup muffin pan with paper liners.
- Bake in a preheated 375 degree oven for 15 minutes or until a toothpick inserted comes out clean.
- Cool for 5 minutes before removing to a wire rack.
