Creamy Cajun Chicken Pasta

What you need:

    • 8 oz. penne pasta
    • 2 Tbsp. EVOO
    • 2 chicken breasts, butterflied or pounded thin
    • 1 1/2 Tbsp. cajun seasoning, divided
    • 2 Tbsp. unsalted butter
    • 2 cloves minced garlic
    • 1 Tbsp. all purpose flour
    • 1 1/2 cups half and half
    • 1/3 cup shredded Parmesan cheese, plus some for topping
    • Salt and pepper to taste
    • 1 roma tomato, diced
    • Fresh parsley, chopped

Directions:

    1. Cook pasta according to package directions. Drain.
    2. Meanwhile, heat olive oil over medium heat in a large skillet.
    3. Season chicken with 1 Tbsp. of Cajun seasoning and add to skillet. Cook on each side until browned and chicken is cooked through.
    4. Remove from skillet. Clean it and return it to medium heat.
    5. Add butter and melt. Then add garlic and saute for 30 seconds.
    6. Add flour and cook, whisking for 30 seconds.
    7. Slowly whisk in half and half, a tablespoon at a time to start until about 1/2 cup has been added, then you can add a little more at a time.
    8. Stir in Parmesan cheese and stir until melted.
    9. Add 1/2 Tbsp. cajun seasoning. Season with salt and pepper.
    10. Add cooked penne to sauce and top with tomatoes, parsley, additional Parmesan, and chicken that has been sliced.
