Sausage & Roasted Broccoli Lemon Penne Skillet

What you need:

    • 3 cups fresh broccoli florets
    • 3 Tbsp. unsalted butter, melted
    • 2 cloves minced garlic
    • 1 Tbsp. lemon zest
    • Salt and pepper to taste
    • 1 lb. Italian sausage
    • 1 lb. penne pasta
    • 1/4 cup lemon juice
    • 1/2 cup Parmesan cheese
    • 2 Tbsp. fresh parsley, minced

Directions:

    1. Toss broccoli with butter, garlic, lemon zest, salt, and pepper on a baking sheet.
    2. Roast at 400 degrees for 10 to 15 minutes or until broccoli is tender.
    3. Meanwhile, cook penne according to package directions.
    4. In a skillet, brown and crumble sausage over medium-high heat. Then add penne and lemon juice.
    5. Add roasted broccoli to the skillet and season with salt and pepper to taste.
    6. Sprinkle Parmesan and parsley and serve immediately.
