Sausage & Roasted Broccoli Lemon Penne Skillet
What you need:
- 3 cups fresh broccoli florets
- 3 Tbsp. unsalted butter, melted
- 2 cloves minced garlic
- 1 Tbsp. lemon zest
- Salt and pepper to taste
- 1 lb. Italian sausage
- 1 lb. penne pasta
- 1/4 cup lemon juice
- 1/2 cup Parmesan cheese
- 2 Tbsp. fresh parsley, minced
Directions:
- Toss broccoli with butter, garlic, lemon zest, salt, and pepper on a baking sheet.
- Roast at 400 degrees for 10 to 15 minutes or until broccoli is tender.
- Meanwhile, cook penne according to package directions.
- In a skillet, brown and crumble sausage over medium-high heat. Then add penne and lemon juice.
- Add roasted broccoli to the skillet and season with salt and pepper to taste.
- Sprinkle Parmesan and parsley and serve immediately.
