Sausage, Brussels, and Parmesan Pasta

What you need:

    • 1 lb. spaghetti
    • 1 lb. sweet Italian sausage
    • 4 Tbsp. EVOO, plus some
    • 12 oz. shredded brussels sprouts
    • Salt and pepper
    • 1/4 tsp. red pepper flakes
    • 6 cloves minced garlic
    • 1 1/2 cups Parmesan cheese

Directions:

    1. Heat a drizzle of EVOO in a large skillet over medium heat. Add sausage and brown and crumble. Then set aside.
    2. Heat 2 Tbsp. EVOO in the skillet and add brussels and red pepper flakes, salt, and pepper (to taste), and saute for 3 to 4 minutes.
    3. Add garlic and saute for 1 minute more.
    4. Menawhile, cook pasta in salted boiling water until slightly under al dente. Do not drain.
    5. Use tongs to move spaghetti to skillet.
    6. Add Parmesan cheese and sausage. Drizzle with EVOO and add enough pasta water for the cheese to melt and coat the pasta evenly.
    7. Season with salt and pepper and serve.
