Sausage, Brussels, and Parmesan Pasta
What you need:
- 1 lb. spaghetti
- 1 lb. sweet Italian sausage
- 4 Tbsp. EVOO, plus some
- 12 oz. shredded brussels sprouts
- Salt and pepper
- 1/4 tsp. red pepper flakes
- 6 cloves minced garlic
- 1 1/2 cups Parmesan cheese
Directions:
- Heat a drizzle of EVOO in a large skillet over medium heat. Add sausage and brown and crumble. Then set aside.
- Heat 2 Tbsp. EVOO in the skillet and add brussels and red pepper flakes, salt, and pepper (to taste), and saute for 3 to 4 minutes.
- Add garlic and saute for 1 minute more.
- Menawhile, cook pasta in salted boiling water until slightly under al dente. Do not drain.
- Use tongs to move spaghetti to skillet.
- Add Parmesan cheese and sausage. Drizzle with EVOO and add enough pasta water for the cheese to melt and coat the pasta evenly.
- Season with salt and pepper and serve.
