Pumpkin Chocolate Chip Pudding Cookies

What you need:

    • 3/4 cup (1 1/2 cups) unsalted butter, at room temperature
    • 3/4 cup brown sugar
    • 1/4 cup granulated sugar
    • 1 small box pumpkin spice instant pudding mix
    • 2 large eggs
    • 1 tsp. vanilla extract
    • 1 tsp. baking soda
    • 2 1/4 cups all-purpose flour
    • 1 to 2 cups semisweet chocolate chips

Directions:

    1. In a stand mixer, cream together butter, brown sugar, and granulated sugar.
    2. Add pudding mix and mix until combined.
    3. Add eggs and vanilla and mix until combined.
    4. Add baking soda and flour and mix until just combined.
    5. Stir in chocolate chips.
    6. Scoop onto a parchment paper or silicone mat lined baking sheet.
    7. Bake in a preheated 350 degree oven for 8 to 10 minutes
    8. Let cool for 2 minutes before removing to a wire rack.
