Chicken Bacon Alfredo Roll Ups

What you need:

    • 8 lasagna noodles (not oven ready)
    • 2 cups cooked, shredded chicken
    • 1 lb. bacon, cooked and crumbled
    • 2 cups shredded mozzarella cheese

For the Garlic Alfredo Sauce:

    • 1/2 cup unsalted butter
    • 2 cups heavy cream
    • 4 oz. cream cheese
    • 1/2 tsp. minced garlic
    • 1 tsp. garlic powder
    • 1 tsp. Italian seasoning
    • 1/4 tsp. salt
    • 1/4 tsp. pepper
    • 1 cup grated Parmesan cheese

Directions:

    1. Cook lasagna noodles until al dente. Drain and rinse the noodles with cold water and lay on a paper towel to remove excess water.
    2. In a medium saucepan, add butter, heavy cream, and cream cheese over medium heat. Whisk until melted.
    3. Add minced garlic, garlic powder, Italian seasoning, salt, and pepper. Continue to whisk until smooth.
    4. Add parmesan cheese and bring to a simmer. Cook for 3 to 5 minutes or until it thickens.
    5. Add 1 cup alfredo sauce in a greased 9x13-inch pan.
    6. Spread 2 Tbsp. alfredo sauce over each noodle. Add chicken and bacon over the noodle and top with 3 Tbsp. shredded mozzarella.
    7. Roll up each lasagna noodle and place seam side down in pan.
    8. Pour remaining alfredo sauce over the top and top with remaining mozzarella.
    9. Bake in a preheated 350 degree oven for 30 minutes or until heated through and cheese is bubbly.
