Grilled Chicken and Bacon Pizza with Garlic Cream Sauce

For the garlic cream sauce:

    • 2 Tbsp. butter
    • 1 Tbsp. olive oil
    • 4 cloves minced garlic
    • 1 shallot, finely diced
    • 2 Tbsp. all purpose flour
    • 1/4 cup dry white wine, beer, or chicken broth
    • 3/4 cup milk
    • 1/2 tsp. dried basil

For the pizza:

    • 2 chicken breasts, grilled and diced
    • 6 slices bacon, cooked and crumbled
    • Your favorite recipe for pizza dough
    • Salt and pepper
    • 1 cup shredded colby jack cheese
    • 7 slices mozzarella cheese

Directions:

    1. For the sauce: in a skillet, melt butter and oil over medium heat. Add garlic and shallot and cook for 2 minutes.
    2. Add flour and whisk. Cook for 1 to 2 minutes while stirring.
    3. Slowly add wine and whisk. Then slowly add milk and whisk. Season to taste.
    4. Add basil. Stir and cook for 2 minutes over medium heat. Remove from heat.
    5. Roll out pizza dough onto a pizza pan or stone. Prick all over with a fork.
    6. Spread prepared sauce on top and then add chicken, bacon, colby jack, and mozzarella.
    7. Bake in a preheated 450 degree oven for 15 minutes.
