Cilantro Lime Turkey Quinoa Stuffed Peppers

What you need:

    • 4 green bell peppers, cut in half lengthwise and seeded
    • 3 cups cooked quinoa
    • 1 Tbsp. olive oil
    • 1 small onion, diced
    • 1 lb. ground turkey
    • 1 tsp. chili powder
    • 1 tsp. paprika
    • 2 limes, zest of 1 and juice of both
    • 1 cup fresh cilantro, chopped
    • 2 cups shredded pepper jack cheese, divided
    • 1/2 cup chicken (or turkey) broth
    • Salt and pepper to taste

Directions:

    1. Heat oil over medium-high heat in a large skillet. Add onions and cook for about 3 minutes.
    2. Add ground turkey, chili powder, paprika, salt, and pepper. Cook and crumble turkey.
    3. Stir together turkey and cooked quinoa. Then add lime zest and juice, cilantro, broth, and 1 cup cheese. Season with salt and pepper to taste.
    4. Remove from heat and allow to cool while you cut bell peppers in half and remove seeds and membrane.
    5. Add a shallow layer of water in a 9x13-inch casserole dish. Fill peppers with turkey mixture and place in casserole dish.
    6. Bake, covered, in a preheated 400 degree oven for about 30 minutes.
    7. Remove from oven and top peppers with cheese.
    8. Return to oven and bake, uncovered, for about 10 minutes or until cheese has melted.
