Cheesy Bruschetta Chicken
What you need:
For the bruschetta topping:
- 1 can (14.5 oz) diced tomatoes, drained
- 1 clove minced garlic
- 1 Tbsp. olive oil
- 1/2 tsp. Italian seasoning
- 1/4 tsp. ground black pepper
For the chicken:
- 1 1/2 lb. chicken breasts
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 2 Tbsp. olive oil
- 3/4 cup shredded mozzarella
- 1/4 cup shredded Parmesan
- 1/4 cup chopped fresh parsley, if desired
Directions:
- Stir together the bruschetta ingredients and set aside.
- Season the chicken with salt and pepper on each side.
- Heat olive oil over medium-high heat in a large skillet. Cook on each side until chicken is browned and cooked through.
- Flip the chicken over and then top with bruschetta and sprinkle with mozzarella and Parmesan.
- Broil on HIGH for 2 to 3 minutes or until cheese is bubbly and browned.
- Top with parsley, if desired, and serve.
