Cheesy Bruschetta Chicken

What you need:

For the bruschetta topping:

    • 1 can (14.5 oz) diced tomatoes, drained
    • 1 clove minced garlic
    • 1 Tbsp. olive oil
    • 1/2 tsp. Italian seasoning
    • 1/4 tsp. ground black pepper

For the chicken:

    • 1 1/2 lb. chicken breasts
    • 1/2 tsp. salt
    • 1/4 tsp. ground black pepper
    • 2 Tbsp. olive oil
    • 3/4 cup shredded mozzarella
    • 1/4 cup shredded Parmesan
    • 1/4 cup chopped fresh parsley, if desired

Directions:

    1. Stir together the bruschetta ingredients and set aside.
    2. Season the chicken with salt and pepper on each side.
    3. Heat olive oil over medium-high heat in a large skillet. Cook on each side until chicken is browned and cooked through.
    4. Flip the chicken over and then top with bruschetta and sprinkle with mozzarella and Parmesan.
    5. Broil on HIGH for 2 to 3 minutes or until cheese is bubbly and browned.
    6. Top with parsley, if desired, and serve.
