Mimi's Cafe Carrot Cake Muffin
What you need:
- 1 1/2 cups all-purpose flour
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 cup vegetable oil
- 1 cup brown sugar
- 3 eggs
- 1/2 cup chopped walnuts
- 1/2 cup crushed canned pineapple, drained
- 1/2 cup raisins
- 1 cup finely shredded carrots
Directions:
- Sift flour, baking soda, baking powder, cinnamon, and salt into a mixing bowl.
- In a separate bowl, whisk together oil, sugar, and eggs.
- Add wet ingredients to dry and mix until just combined.
- Add walnuts, pineapple, raisins, and carrots and stir until just combined.
- Fill 18 muffin liners set in a muffin pan 2/3 way full.
- Bake in a preheated 350 degree oven for about 20 minutes or until a toothpick inserted in the middle comes out clean.
